Having worked with Parogon Group previously on their Trentham Gardens location for the first Willow restaurant, along with many other Parogon properties, IMD were appointed to design and manage the fit-out of Willow Telford, and as such expectations were high. Known for their portfolio of exceptional dining destinations across Staffordshire, Cheshire, and Shropshire, the group envisioned a Mediterranean-inspired restaurant that would stand out as a chic yet approachable dining venue. The challenge? Transforming an empty Food & Beverage unit, formerly an Asian restaurant, into a stylish escape reminiscent of sun-soaked coasts and timeless elegance—all within a tight timeframe.
The project broke ground in July 2024, with the team facing the ambitious goal of opening to the public by mid-September. Through meticulous planning, innovative design, and seamless project management, IMD brought the vision to life, delivering a space that captures the spirit of Mediterranean living while meeting the practical needs of a bustling modern restaurant.

The Mediterranean Vision: Design Concept
At its heart, Willow Telford reflects the essence of Mediterranean culture—where relaxed elegance, coastal charm, and the warmth of shared meals come together. From the outset, the design focused on evoking feelings of holiday nostalgia and understated luxury. By day, diners are greeted with a light, airy space perfect for a leisurely lunch, while evenings see the restaurant transform into a cosy, softly lit retreat.
Key Design Features
IMD brought the Mediterranean vision to life through a thoughtful mix of textures, colours, and details:
• Whitewashed Walls and Beach-Washed Timbers: These elements evoke a sense of coastal simplicity, creating a calming foundation for the space.
• Rich Terracotta and Ocean Blues: Seen throughout the fabrics, paints, and decorative accents, these colours bring both warmth and tranquillity to the environment.
• Mediterranean Planting and Layered Details: The use of lush greenery, macramé hangings, and eclectic artwork creates a space that feels lived-in and inviting, adding layers of personality.
• Patterned Tiles, Trellises, and Rattan Lighting: These features add depth, texture, and visual interest, seamlessly blending function with aesthetics.
• Signature Olive Tree: Placed in a woven willow basket at the entrance, the olive tree serves as a focal point and a warm Mediterranean welcome for diners.

A Layout for Every Occasion
Beyond aesthetics, Willow Telford was designed with functionality and versatility in mind, catering to a variety of dining and social experiences.
• Dynamic Dining Zones: A central walkway guides diners through the space, leading to raised areas and a mix of seating options. From poseur-height tables perfect for casual drinks to cosy booths and fixed seating, every detail is designed for comfort and flexibility.
• Intimate and Social Spaces: Whether it’s a romantic dinner for two, a family gathering, or a celebration with friends, the layout accommodates both intimate settings and larger party bookings.
• Striking Focal Points: The standout feature of the restaurant is the series of arched wall displays. Adorned with rows of bottles, these arches add character and create a sense of drama while tying together the Mediterranean theme.

Completing such a transformative project within a tight schedule required careful coordination and a relentless commitment to quality. IMD worked closely with contractors and suppliers to ensure every detail was executed to perfection, from the first coat of paint to the final decorative touches.
