A Mediterranean Escape: Stylishly Understated Restaurant Design

Willow was created to bring a fresh Mediterranean-inspired dining experience to Telford, transforming a vacant food and beverage unit into a vibrant destination that reflects the relaxed, sociable spirit of coastal living. Delivered for Parogon Group, the project combined interior design and project management expertise to create a venue that feels welcoming, immersive, and commercially effective from day one.

Our approach was shaped by the principles of people, place, flow, and business. The design aims to transport guests through atmosphere rather than imitation, capturing the warmth, ease, and connection associated with Mediterranean culture while ensuring the space meets the operational demands of a modern hospitality venue.

At its heart, Willow is designed around the customer journey. Guests are welcomed by a striking olive tree, creating an immediate sense of arrival and establishing the venue's identity from the moment they enter. From there, a central circulation route intuitively guides visitors through the space, encouraging exploration while providing clear connections between dining, social, and waiting areas. The layout has been carefully planned to accommodate a variety of occasions, from casual lunches and drinks with friends to larger celebrations and evening dining experiences.

The interior palette draws inspiration from Mediterranean landscapes and architecture. Whitewashed finishes, weathered timbers, terracotta tones, and ocean-inspired blues work together to create an environment that feels both relaxed and refined. Layers of texture, including patterned tiles, woven materials, rattan lighting, and soft fabrics, add richness and depth, creating a setting that evolves throughout the day.

Natural flow between day and evening experiences was a key consideration. During daylight hours, the interior feels bright, airy, and uplifting, making the most of natural light and fresh, light-toned materials. As evening arrives, softer lighting and warmer textures transform the atmosphere into a more intimate and sociable setting, encouraging guests to linger and enjoy the experience.

Distinctive design features help establish a memorable sense of place. Mediterranean planting, artisan-inspired detailing, eclectic artwork, and feature arch displays combine to create moments of discovery throughout the venue. These focal points add character and authenticity while supporting the relaxed hospitality experience that defines the Willow brand.

Operational performance was considered throughout the design process. A mix of booths, fixed seating, tables, and elevated social spaces provides flexibility for different group sizes and customer behaviours, enabling the venue to adapt throughout the day and maximise capacity without compromising comfort. This variety of settings supports both guest satisfaction and long-term commercial success.

Willow demonstrates how thoughtful hospitality design can create an emotional connection between guests and a venue. By carefully balancing atmosphere, functionality, and operational efficiency, the project delivers a dining experience that feels simultaneously aspirational and accessible, bringing together people, place, flow, and business in a way that supports both memorable experiences and sustainable growth.
